30. Tortellini Soup

 1 lb Italian Sausage
 1 cup Onion, diced
 2 Cloves Garlic, minced
 5 cups Beef Broth
 ½ cup Water
 4 Tomatoes, diced
 1 cup Carrots, sliced
 1 Green Pepper, diced
 8 oz Can Tomato Sauce
 ½ tsp Basil Seasoning
 ½ tsp Oregano Seasoning
 3 tbsp Fresh Parsley, chopped
 1 ½ cups Zucchini, diced
 2 cups Cheese Tortellini

In large stock pot, brown sausage, onions, and garlic until tender. Add broth, water, tomatoes, carrots, green peppers, sauce, basil, oregano, and parsley. Simmer 35-40 minutes.

Add zucchini and tortellini. Simmer 20 minutes. Top with Parmesan cheese and serve.
