Whisk honey, soy sauce, garlic, and ginger together in a medium bowl.
Place shrimp in a large press and seal bag or bowl-. Pour half the marinade mixture on top, shake or stir, then refrigerate (for 15 minutes up to 12 hours). Cover and refrigerate remaining marinade for step 3.
Heat olive oil in skillet over medium-high heat. Add shrimp (discard used marinade). Cook shrimp on one side until pink, about a minute. Then flip and pour remaining marinade over shrimp and cook through, about 1 minute more.
Serve cooked shrimp in sauce with a garnish of green onion. Excellent on brown rice with steamed veggies on the side.
