Chuckwagon Turkey Bake

Ingredients:
 2 cups Cooked Turkey, shredded
 1 16.5 oz Can Kidney Beans, rinsed and drained
 1 cup Sharp Cheddar Cheese, shredded
 1 Green Bell Pepper, diced
 1 Red Bell Pepper, diced
 1 Onion, diced
 2 tsp Garlic, minced
 1 tbsp Oil
 ½ cup Barbecue Sauce
 ½ cup Chicken Broth
 1 8.5 oz Box Jiffy Corn Muffin Mix
 1 Egg
  cup Milk
Directions:

Preheat oven to 375 degrees.

Coat 9x13" baking dish with non-stick spray.

Heat oil in skillet over medium-high heat. Sauté peppers, onion, and garlic, until tender, about 5 minutes. Add turkey, beans, BBQ sauce, and broth. Cook another 3 minutes.

Spread mixture in bottom of baking dish and top with shredded cheese.

Mix cornbread, milk, and egg, per box instructions. Spread over turkey mixture.

Bake 20-25 minutes, or until cornbread is golden brown and a toothpick comes out clean.

Alternative topping ideas! Try shredded cheese, BBQ sauce, sour cream, or minced chives.
